Easy Mediterranean Salmon in Parchment Paper Dinner Recipes


  • 2 pounds of salmon fillet;

  • ¼ teaspoon of sea salt;

  • One teaspoon of paprika;

  • One teaspoon of ground ginger;

  • One teaspoon of dried dill;

  • ¼ cup of kalamata olives and chop them;

  • 1/3 cup of artichoke hearts;

  • ¼ cup of capers;

  • 3 sprigs of fresh dill and chop them;

  • 1/3 cup of pesto sauce.


  1. Preheat your oven to 400 F and put a long parchment paper sheet on the baking sheet. You should use the large one.

  2. Put the salmon on top of the paper and spread sea salt, dried dill, ground ginger, and paprika over it.

  3. Top the salmon with the rest of the ingredients so every area has an even portion.

  4. Fold the ends and sides of the paper and make it like a packet. Secure the packet with twine.

  5. Bake the mixture on the center of the oven for 20 minutes or you can wait until the salmon well-cooked. If your salmon is thicker then it may take 30 minutes until the salmon is well done.

  6. Remove the fish from oven and cut the twine to unwrap the paper. Cut the fish into an individual-sized portion along with your favorite side dish.
